Let’s start the week with another healthy recipe ! I’ve been on a low carb diet for a while now and I realized that I end up eating chicken for most of my lunches.. This recipe is super quick to make and is a nice alternative for a meal. Also, it’s a pretty versatile recipe since you can pretty much put whatever you’d like in it!
You’ll need :
– 4 eggs
– a pinch of salt and a bit of pepper
– vegetables (i decided to put some of those frozen mixed veggies & capsicum in it. But anything is fine : broccoli, cauliflower, carrots, zucchini, etc)
You can add :
– feta cheese
– ham (I chose to put the leftover chicken I had)
Just mix everything together, put it in muffin forms and let it bake in the oven for about 15mins at 185°C.
And tadaaa, here you have a healthy lunch or even breakfast or snack 🙂
